AVIF is a superb modern format — derived from the AV1 video codec, it routinely beats JPG by a wide margin at equal quality — but its youth is exactly why you might convert away from it. Older photo editors, many email clients, Microsoft Office, and plenty of legacy software still cannot open AVIF, whereas JPG is the universal fallback that opens absolutely everywhere.
The decode step is lossless, so no quality is lost reading the AVIF; the only compression happens when re-encoding to JPG. At the default quality of 90 that loss is invisible to the eye for typical photographs, and you can push higher for archival needs. Note that Safari only gained AVIF decoding in version 16 on iOS 16, so very old Apple devices will not be able to open the source at all.
One trade-off to plan for: the canvas re-export strips EXIF metadata such as camera model, GPS, and capture time, though it preserves the ICC color profile so colors stay accurate. If keeping metadata matters, handle that separately. When your goal is publishing to the web rather than maximum compatibility, converting to the smaller, broadly supported WebP format is often the better move.
